What to do with tuna "loin"
Many of us automatically can our Albacore tuna, and of course that's always a good option, but Albacore also makes great eating as fresh or frozen "loin" as well. This is a great use of fresh tuna. They can be made and frozen or cooked fresh. The recipe is courtesy of Guy Fieri. One tip, put the tuna patties in the freezer for a short time to hold it together even better before throwing on the grill. Recipe is here.
If you like sushi, you will love this recipe. It can be seared to your liking, but it is best lightly seared!
Take a tuna loin and rub in sesame oil, roll in sesame seeds, sear 10-15 seconds (to your likeness) on three sides. Wrap in saran wrap then put in the fridge for at least an hour. Slice into pieces. Serve with a soy/honey/ginger sauce or wasabi/soy sauce.
